Why raise snails?
Snails have been consumed by humans for millennia. But North Americans are only now discovering that snails, once thought of as exclusive to French cuisine, are a versatile, sustainable, and delicious food source, rich in protein, selenium, and other vitamins and minerals.
But short of a few suppliers, most snails (commonly referred to by the French word, escargots) are located in North America, with most of the escargots imported in cans. But snails can be successfully grown on this continent.
